White Lasagna Soup Recipe

A comforting bowl of White Lasagna Soup

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casing
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup milk
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 9 lasagna noodles, broken into small pieces
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in chicken broth and milk. Bring to a simmer.
  4. Stir in cream cheese and Parmesan cheese until melted and smooth.
  5. Add lasagna noodles and cook until tender, about 10-12 minutes.
  6. Stir in ricotta cheese and basil. Season with salt and pepper to taste.
  7. Serve hot and garnish with extra Parmesan cheese and basil, if desired.

Notes

For a richer flavor, use half-and-half or heavy cream instead of milk. You can also add spinach or other vegetables to the soup for added nutrients.
