  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces white chocolate, melted and cooled
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth and creamy.
  5. Beat in vanilla extract, then add eggs one at a time, mixing well after each addition.
  6. Stir in melted white chocolate until well combined.
  7. Gently fold in blueberries.
  8. Pour batter over the crust.
  9. Bake for 60-70 minutes, or until the center is just set.
  10. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  11. Remove from oven and let cool completely on a wire rack.
  12. Refrigerate for at least 4 hours before serving.
