White Chicken Chili

This creamy and flavorful White Chicken Chili is a comforting and easy-to-make dish, perfect for a chilly evening. Packed with tender chicken, white beans, and a hint of spice, it’s a hearty meal the whole family will love.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 (15-ounce) cans great northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles, undrained
  • 1/2 cup heavy cream or sour cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, cumin, chili powder, and cayenne pepper (if using) and cook for 1 minute more, until fragrant.
  2. Add shredded chicken, chicken broth, great northern beans, and diced green chiles to the pot. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  3. Stir in heavy cream or sour cream. Season with salt and pepper to taste.
  4. Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, cilantro, and avocado.

Notes

For a thicker chili, mash some of the beans with a potato masher or immersion blender before adding the cream. You can also add a squeeze of lime juice for a touch of brightness.
