A hearty bowl of steaming white bean soup

This creamy white bean soup is a comforting and healthy meal. It’s packed with flavor and comes together quickly with pantry staples.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in vegetable broth and bring to a simmer.
  3. Add cannellini beans, thyme, salt, and pepper. Bring back to a simmer and cook for 10 minutes.
  4. Remove from heat and use an immersion blender to partially blend the soup until creamy, leaving some beans whole for texture. Alternatively, transfer about 2 cups of soup to a regular blender and blend until smooth. Return to the pot.
  5. Stir in lemon juice.
  6. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, add a parmesan rind to the soup while simmering. Remove before serving. You can also add a drizzle of olive oil or a dollop of plain yogurt to each bowl before serving.
