Vegetable Soup Recipe: Delicious & Easy!

This hearty vegetable soup is packed with fresh, colorful veggies and simmered in a flavorful broth. It’s a comforting and healthy meal perfect for any time of year.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped green beans
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup chopped zucchini
  • 1/2 cup chopped cabbage
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add green beans, corn, zucchini, and cabbage. Stir in Italian seasoning, salt, and pepper.
  5. Simmer for 15-20 minutes, or until vegetables are tender.
  6. Garnish with fresh parsley before serving.

Notes

For a richer flavor, add a Parmesan cheese rind to the soup while simmering and remove before serving. Serve with crusty bread for dipping.
