These delicious vegan spinach rolls are a savory and satisfying treat, perfect as an appetizer or light meal. Flaky dough is filled with a flavorful spinach and vegan cheese mixture, then baked to golden perfection.

  • 1 package (14.1 oz) vegan puff pastry, thawed
  • 10 oz fresh spinach, chopped
  • 1/2 cup vegan ricotta cheese
  • 1/4 cup vegan parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon plant-based milk, for brushing
  • Sesame seeds, for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute, until fragrant.
  3. Add spinach to the skillet and cook until wilted, about 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
  4. In a bowl, combine the cooked spinach, vegan ricotta cheese, and vegan parmesan cheese. Mix well.
  5. On a lightly floured surface, unfold the vegan puff pastry.
  6. Spread the spinach mixture evenly over the puff pastry.
  7. Starting from one end, tightly roll up the puff pastry into a log.
  8. Using a sharp knife, cut the log into 1-inch thick slices.
  9. Place the spinach rolls on the prepared baking sheet.
  10. Brush the tops of the rolls with plant-based milk and sprinkle with sesame seeds, if desired.
  11. Bake for 20-25 minutes, or until golden brown.
  12. Let cool slightly before serving.

Serve these spinach rolls warm with a side of marinara sauce for dipping.
