  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped fresh strawberries
  • 1/4 cup strawberry jam
  • Pink or red sanding sugar for sprinkling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing well to combine.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped fresh strawberries gently to avoid pulpiness.
  7. Roll dough into 1-inch balls and place on the prepared baking sheet, spacing them 2 inches apart.
  8. Make an indentation in the center of each ball and fill with a small spoonful of strawberry jam.
  9. Optionally, sprinkle the tops with pink or red sanding sugar for a festive look.
  10. Bake for 12-15 minutes or until the edges turn lightly golden.
  11. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
