loaded baked potatoes

Indulge in the ultimate comfort food with these incredibly satisfying loaded baked potatoes, generously topped with all your favorite fixings. Perfect as a hearty main dish or a delightful side, they’re surprisingly easy to customize and prepare for any meal.

  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste
  • 4 tablespoons unsalted butter, softened
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly under cold water and pat them completely dry with a paper towel.
  2. Using a fork, pierce each potato several times all over. Rub each potato evenly with olive oil, then sprinkle generously with salt and pepper.
  3. Place the prepared potatoes directly on the oven rack (a baking sheet can be placed on a lower rack to catch any drips, if desired) and bake for 60-75 minutes, or until the potatoes are fork-tender and the skin is crispy.
  4. Carefully remove the potatoes from the oven. Using a sharp knife, slice each potato lengthwise down the middle, being careful not to cut all the way through to the bottom.
  5. Gently fluff the inside of each potato with a fork. Add 1 tablespoon of softened butter, 2 tablespoons of sour cream, ¼ cup of shredded cheddar cheese, crumbled bacon, and a sprinkle of fresh chives to each potato.
  6. Serve immediately and enjoy your perfectly loaded baked potato!

Notes

For an even crispier skin, you can lightly score the potatoes a few times before rubbing with oil and salt. If you like your cheese extra melty, pop the potatoes back into the oven for 3-5 minutes after adding cheese and bacon (before adding sour cream and chives).
