Turmeric Ginger Chicken Noodle Soup

A warming and nourishing chicken noodle soup infused with anti-inflammatory turmeric and ginger, perfect for boosting immunity and soothing the soul.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup egg noodles
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent.
  2. Add garlic, grated ginger, and turmeric; cook for another 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery. Reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Add shredded chicken and egg noodles to the pot. Cook for an additional 7-8 minutes until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Stir in fresh parsley and lemon juice just before serving for added brightness.

Notes

For extra flavor, garnish with a sprinkle of chili flakes or a drizzle of coconut milk for creaminess.
