  • 12 corn tostada shells
  • 1 cup cooked shredded chicken
  • 1 (15-ounce) can black beans, rinsed and drained
  • 2 ripe avocados
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and minced
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded lettuce, salsa, sour cream

Instructions

  1. In a medium bowl, mash the avocados with a fork. Stir in the red onion, cilantro, jalapeno, lime juice, salt, and pepper.
  2. In a separate bowl, combine the cooked chicken and black beans.
  3. Spread a layer of guacamole on each tostada shell.
  4. Top with the chicken and bean mixture.
  5. Add your favorite toppings, such as shredded lettuce, salsa, or sour cream.
  6. Serve immediately.

Notes

For extra flavor, grill the chicken before shredding. You can also use canned refried beans instead of black beans.
