This hearty Tortellini Soup with Sausage is a quick and easy weeknight meal. Filled with cheesy tortellini, savory Italian sausage, and flavorful broth, it’s comfort food in a bowl!

  • 1 pound Italian sausage, removed from casing
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 9 ounces cheese tortellini, fresh or frozen
  • 2 cups fresh spinach, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, chopped onion, and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and add the diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in the tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
  5. Add the chopped spinach and cook until wilted, about 1-2 minutes.
  6. Serve hot, garnished with grated Parmesan cheese.

Notes

For a creamier soup, stir in a splash of heavy cream or half-and-half before serving. You can also add other vegetables like carrots, celery, or zucchini.
