  • For the Brownies:
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup strong brewed coffee, cooled
  • 1/4 cup chocolate chips (optional)
  • For the Mascarpone Layer:
  • 8 ounces mascarpone cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon strong brewed coffee, cooled
  • 1/2 teaspoon vanilla extract
  • Cocoa powder, for dusting

Instructions

  1. Make the Brownies: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, combine melted butter, sugar, cocoa powder, and salt. Mix well.
  3. Stir in vanilla extract, then beat in eggs one at a time.
  4. Gradually add flour and coffee, mixing until just combined. Fold in chocolate chips, if using.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let the brownies cool completely in the pan.
  7. Make the Mascarpone Layer: In a medium bowl, beat mascarpone cheese, powdered sugar, coffee, and vanilla extract until smooth and creamy.
  8. Spread the mascarpone mixture evenly over the cooled brownies.
  9. Dust with cocoa powder.
  10. Refrigerate for at least 30 minutes before cutting into squares and serving.

Notes

For a richer coffee flavor, brush the cooled brownies with coffee liqueur before adding the mascarpone layer.
