  • 1/2 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes (optional)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, red onion, and cilantro.
  2. In a separate small bowl, whisk together the rice vinegar, soy sauce, lime juice, sesame oil, honey, red pepper flakes (if using), and minced garlic.
  3. Pour the dressing over the cucumber mixture and toss gently to combine.
