  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup tomato paste
  • 1/4 cup honey
  • 2 tbsp garam masala
  • 1 tbsp paprika
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large skillet, melt butter over medium heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  3. Stir in diced tomatoes, heavy cream, tomato paste, honey, garam masala, paprika, turmeric, and cayenne pepper (if using). Season with salt and pepper to taste.
  4. Bring the sauce to a simmer and cook for 10 minutes, stirring occasionally, until slightly thickened.
  5. Return the chicken to the skillet and stir to coat in the sauce.
  6. Serve hot over cooked rice, garnished with fresh cilantro.
  7. Serve with warm Texas Roadhouse Rolls and cinnamon butter.
