Texas Caviar is a vibrant, zesty salad featuring black-eyed peas, fresh vegetables, and a tangy vinaigrette, perfect as a dip or side dish.

  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup finely chopped red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 jalapeño, seeded and finely chopped (optional)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin

Instructions

  1. In a large bowl, combine black-eyed peas, cherry tomatoes, red onion, green and red bell peppers, jalapeño, and cilantro.
  2. In a small bowl, whisk together apple cider vinegar, olive oil, sugar, salt, black pepper, and cumin until sugar dissolves.
  3. Pour the dressing over the black-eyed pea mixture and stir well to combine.
  4. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  5. Serve chilled or at room temperature as a dip with chips or as a side salad.

Notes

For extra flavor, add diced avocado just before serving or serve with tortilla chips for a classic pairing.
