Sweet Potato Rolls

Golden Sweet Potato Rolls

These soft and fluffy sweet potato rolls are naturally sweet and incredibly tender. They’re the perfect addition to any holiday meal or weeknight dinner.

Ingredients

  • 1 cup mashed sweet potato, cooked and cooled
  • 1/2 cup warm milk (105-115°F)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 3 1/2 – 4 cups all-purpose flour, plus more for dusting
  • 2 tablespoons butter, melted (for brushing)

Instructions

  1. In a large bowl, combine warm milk and yeast. Let stand for 5 minutes, or until foamy.
  2. Add sweet potato, sugar, melted butter, egg, and salt to the yeast mixture. Stir until well combined.
  3. Gradually add the flour, 1/2 cup at a time, mixing until a soft dough forms. You may not need all of the flour.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and divide it into 12 equal pieces.
  7. Roll each piece into a ball and place in a greased 9×13 inch baking dish.
  8. Cover with plastic wrap and let rise for another 30-45 minutes, or until puffy.
  9. Preheat oven to 375°F (190°C).
  10. Bake for 20-25 minutes, or until golden brown.
  11. Brush with melted butter immediately after removing from the oven.
  12. Let cool slightly before serving.

Notes

For an extra touch of sweetness, drizzle the rolls with a simple powdered sugar glaze after they’ve cooled slightly.
