Sweet Potato Lentil Stew

A hearty and comforting Sweet Potato Lentil Stew that combines tender lentils with sweet potatoes in a flavorful spiced broth, perfect for a nutritious and satisfying meal.

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup dried brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  3. Stir in cumin, smoked paprika, cinnamon, and chili powder; cook for 1 minute to toast the spices.
  4. Add diced sweet potatoes, rinsed lentils, diced tomatoes with their juice, and vegetable broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low and simmer, covered, for about 25-30 minutes or until lentils and sweet potatoes are tender.
  6. Season with salt and pepper to taste. Stir in lime juice.
  7. Serve hot, garnished with chopped fresh cilantro.

Notes

For extra richness, stir in a dollop of coconut milk or yogurt before serving. This stew pairs well with warm crusty bread or steamed rice.
