  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • 2 tbsp olive oil
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • Cooked rice, for serving
  • Optional toppings: chopped green onions, sesame seeds, sriracha

Instructions

  1. In a bowl, toss the chicken pieces with cornstarch until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and garlic powder.
  4. Pour the sauce over the chicken and cook for 1-2 minutes, or until the sauce has thickened slightly.
  5. Serve the sweet chili chicken over cooked rice.
  6. Garnish with your favorite toppings, such as chopped green onions, sesame seeds, and sriracha.

For a vegetarian option, substitute the chicken with tofu or tempeh.
