Strawberry Pop Tart Cookies

Deliciously soft and flaky cookies filled with a sweet strawberry jam, these Strawberry Pop Tart Cookies bring the nostalgic flavors of classic pop tarts into a hand-held cookie form perfect for any dessert or snack.

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, cold and cubed
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup strawberry jam
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp milk (for glaze)
  • Optional: sprinkles for decoration

Instructions

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
  3. In a separate bowl, beat the sugar, egg, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms. Wrap in plastic wrap and chill for 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out dough on a floured surface to about ¼ inch thick. Cut into rectangles roughly 3×2 inches.
  7. Place half of the rectangles on the prepared baking sheet. Add about 1 teaspoon of strawberry jam in the center of each, leaving a small border.
  8. Top each with another rectangle and press edges gently to seal, using a fork to crimp if desired.
  9. Bake for 12–15 minutes or until edges are lightly golden. Let cool completely on wire racks.
  10. Mix powdered sugar and milk to make a glaze. Drizzle over cooled cookies and decorate with sprinkles if desired.

Notes

For extra flaky layers, chill the dough again after assembling the cookies before baking. You can also swap strawberry jam with any other fruit preserves for variety.
