Freshly Baked Strawberry Pie

This classic Strawberry Pie is bursting with fresh strawberry flavor in every bite. A simple, sweet filling complements the flaky, buttery crust, making it the perfect dessert for any occasion.

  • 1 pre-made pie crust (or homemade)
  • 6 cups fresh strawberries, hulled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat oven to 375°F (190°C). If using a pre-made pie crust, prepare according to package instructions. If making homemade, roll out the dough and fit it into a 9-inch pie plate. Crimp the edges.
  2. In a large bowl, gently toss the sliced strawberries with the sugar.
  3. In a small saucepan, whisk together the cornstarch and water until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent, about 1-2 minutes.
  4. Remove from heat and stir in the lemon juice.
  5. Pour the cornstarch mixture over the strawberries and gently fold to combine.
  6. Pour the strawberry mixture into the prepared pie crust. Dot the top with the butter pieces.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with foil.
  8. Let cool completely on a wire rack before slicing and serving.
