Strawberry Oatmeal Muffins

Deliciously moist and wholesome strawberry oatmeal muffins perfect for a healthy breakfast or snack. Bursting with fresh strawberries and hearty oats, these muffins are both nutritious and flavorful.

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine rolled oats, flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped strawberries.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra texture, sprinkle some oats or chopped nuts on top of the muffins before baking.
