These Strawberry Greek Yogurt Muffins are moist, fluffy, and packed with fresh strawberries and protein-rich Greek yogurt, making them a delicious and nutritious treat.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh strawberries, chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the Greek yogurt, milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined; do not overmix.
  5. Carefully fold in the chopped strawberries.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra crunch, sprinkle the muffins with a little coarse sugar before baking, or serve with a dollop of honey or more Greek yogurt.
