These Strawberry Cool Whip Cookies combine fluffy Cool Whip and fresh strawberries for a light, fruity dessert perfect for any occasion.

  • 1 (8 oz) package cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup strawberries, finely chopped
  • 1 cup Cool Whip (whipped topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Gently fold in the chopped strawberries and Cool Whip until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra strawberry flavor, drizzle melted chocolate over cooled cookies or serve with a dollop of fresh Cool Whip.
