This Strawberry Chia Seed Pudding with Coconut Milk is a healthy and delicious breakfast or dessert. It’s naturally sweetened and packed with nutrients, making it a guilt-free treat.

  • 1 cup full-fat coconut milk
  • 1/4 cup chia seeds
  • 1/2 cup fresh strawberries, hulled and chopped
  • 1 tablespoon maple syrup (or other sweetener)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional toppings: extra strawberries, shredded coconut, granola

Instructions

  1. In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and salt.
  2. Gently fold in the chopped strawberries.
  3. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.
  4. Before serving, stir well. If the pudding is too thick, add a splash of coconut milk.
  5. Serve chilled, topped with extra strawberries, shredded coconut, or granola, if desired.

Notes

For a richer flavor, use full-fat coconut milk. You can also blend the strawberries into a purée for a smoother texture.
