Strawberry Banana Muffins

Delightfully moist and naturally sweet, these Strawberry Banana Muffins combine ripe bananas and fresh strawberries for a deliciously fruity treat perfect for breakfast or snacks.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, combine mashed bananas, chopped strawberries, sugar, beaten egg, melted butter, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra texture, sprinkle some chopped walnuts or oats on top before baking.
