Delicious Strawberry Aquafaba Mousse

This Strawberry Aquafaba Mousse is a light and airy dessert that’s surprisingly easy to make using the liquid from canned chickpeas! A perfect vegan treat bursting with fresh strawberry flavor.

  • 1 cup aquafaba (liquid from canned chickpeas)
  • 1/2 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 pound fresh strawberries, hulled
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Chill the aquafaba in the refrigerator for at least 30 minutes.
  2. In a large bowl, beat the chilled aquafaba with an electric mixer until soft peaks form.
  3. Add the cream of tartar and continue beating until stiff peaks form.
  4. Gradually add the sugar, beating until glossy.
  5. In a food processor or blender, puree the strawberries with the lemon juice and vanilla extract until smooth.
  6. Gently fold the strawberry puree into the aquafaba meringue until just combined. Be careful not to overmix.
  7. Divide the mousse among serving glasses or bowls.
  8. Refrigerate for at least 2 hours before serving.

Notes

Garnish with fresh strawberries or a sprinkle of cocoa powder before serving for an extra touch.
