  • 8 ounces cream cheese, softened
  • 4 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup pickled jalapeños, finely chopped
  • 2 tablespoons pickled jalapeño juice
  • 2 green onions, thinly sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup crushed potato chips, for coating

Instructions

  1. In a large bowl, beat together the cream cheese, cheddar cheese, Monterey Jack cheese, mayonnaise, jalapeños, jalapeño juice, green onions, garlic powder, onion powder, and black pepper until well combined.
  2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the cheese ball to firm up.
  3. Place the crushed potato chips in a shallow dish.
  4. Remove the cheese ball from the refrigerator and shape it into a ball.
  5. Roll the cheese ball in the crushed potato chips, pressing gently to adhere.
  6. Serve immediately or refrigerate for later.

Notes

Serve with crackers, pretzels, or vegetables for dipping. For an extra kick, add a pinch of cayenne pepper to the cheese ball mixture.
