Spicy Buffalo Chicken Mac and Cheese Display

This Spicy Buffalo Chicken Mac and Cheese combines creamy, cheesy macaroni with tender buffalo chicken for a flavor-packed comfort food experience. It’s the perfect easy weeknight meal with a spicy kick!

  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound cooked chicken, shredded
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons blue cheese dressing, plus more for serving (optional)
  • 1/4 cup chopped green onions, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cook macaroni according to package directions. Drain and set aside.
  2. While macaroni is cooking, melt butter in a large saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  3. Reduce heat to low and stir in 3 cups of cheddar cheese and Monterey Jack cheese until melted and smooth. Season with salt and pepper.
  4. In a large bowl, combine the cooked macaroni, cheese sauce, shredded chicken, buffalo wing sauce, and blue cheese dressing. Stir well to combine.
  5. Pour the mixture into a greased 9×13 inch baking dish. Top with remaining 1 cup of cheddar cheese.
  6. Bake for 20-25 minutes, or until golden brown and bubbly.
  7. Let stand for 5-10 minutes before serving. Garnish with green onions and additional blue cheese dressing, if desired.

Notes

For an extra crispy topping, sprinkle breadcrumbs over the cheese before baking. Serve with celery sticks and extra buffalo sauce on the side.
