Hearty Spanish Potato Soup

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 ounces Spanish chorizo, sliced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 4 cups chicken broth
  • 1 pound Yukon Gold potatoes, peeled and cubed
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • Optional: crusty bread for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Add the chorizo to the pot and cook until browned and slightly crisp, about 5 minutes.
  3. Stir in the smoked paprika and cumin and cook for 30 seconds more.
  4. Pour in the chicken broth and add the potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the parsley and season with salt and pepper to taste.
  6. Serve hot with crusty bread, if desired.

Notes

For a richer flavor, use homemade chicken broth. You can also add a squeeze of lemon juice before serving for a bright, tangy flavor.
