Sourdough Popovers

Light and airy sourdough popovers with a crisp golden crust, perfect for breakfast or a savory snack.

  • 1 cup active sourdough starter
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 450°F (230°C). Lightly butter the popover pan or muffin tin.
  2. In a mixing bowl, whisk together the sourdough starter, flour, and milk until smooth.
  3. Beat in the eggs and salt until fully combined.
  4. Let the batter rest for 10 minutes to allow the flour to hydrate.
  5. Stir in the melted butter gently.
  6. Pour the batter evenly into the prepared pan, filling each cup about 3/4 full.
  7. Bake for 15 minutes at 450°F, then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes until the popovers are puffed and golden.
  8. Remove from oven and serve immediately for best texture.

Notes

Serve warm with butter and jam, or use them as a base for savory toppings like smoked salmon or cheese.
