These Sourdough Discard Pretzel Bites are chewy, flavorful snacks made using leftover sourdough discard, perfect for a savory treat any time of day.

  • 1 cup sourdough starter discard (unfed)
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda (for dough)
  • 1/2 cup warm water
  • 10 cups water (for boiling)
  • 1/4 cup baking soda (for boiling)
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, combine the sourdough discard, warm water, sugar, salt, baking soda, and flour. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  3. Cover the dough and let it rest for 30 minutes.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Divide the dough into small bite-sized pieces and roll each into a ball.
  6. Bring 10 cups of water and 1/4 cup baking soda to a boil in a large pot.
  7. Boil the pretzel bites in batches for about 30 seconds each; remove with a slotted spoon and place on the prepared baking sheet.
  8. Brush each pretzel bite with the beaten egg and sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Serve warm with mustard or cheese sauce for dipping to enhance the flavor.
