Sourdough Discard Kolaches

Sourdough Discard Kolaches are soft, fluffy pastries filled with sweet or savory fillings, perfect for using up leftover sourdough starter while enjoying a delicious treat.

  • 1 cup sourdough discard
  • 1/2 cup warm milk
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • Jam or cream cheese filling (optional)

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until foamy.
  2. Add the sourdough discard, egg, and melted butter to the yeast mixture. Stir to combine.
  3. Gradually add flour and salt, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Divide the dough into 12 equal pieces and shape each into a ball. Flatten each ball and press a small well in the center.
  8. Fill each well with your choice of jam or cream cheese filling.
  9. Place the kolaches on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
  10. Bake for 15-18 minutes until golden brown. Let cool slightly before serving.

Notes

For a savory twist, fill the kolaches with sausage and cheese instead of jam or cream cheese.
