Sourdough Cheez-It Crackers

Crunchy and tangy sourdough Cheez-It crackers made from natural sourdough starter and sharp cheddar cheese, perfect for snacking or entertaining.

  • 1 cup sourdough starter (discard or active)
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 6 tablespoons unsalted butter, cold and cubed
  • 1 1/4 cups sharp cheddar cheese, finely grated
  • 1 teaspoon garlic powder
  • 1-2 tablespoons cold water (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the sourdough starter, flour, salt, smoked paprika, cayenne pepper, garlic powder, and grated cheddar cheese.
  3. Add the cold cubed butter and work it into the mixture using your fingers or a pastry cutter until it resembles coarse crumbs.
  4. If the dough is too dry, add cold water one teaspoon at a time until it forms a firm dough.
  5. Roll the dough out between two sheets of parchment paper to about 1/8 inch thickness.
  6. Cut the dough into 1-inch squares using a knife or pizza cutter. Use a fork to poke holes in each square to prevent puffing.
  7. Transfer the squares onto the prepared baking sheet, spacing them evenly.
  8. Bake for 18-22 minutes or until the crackers are golden and crispy.
  9. Remove from oven and cool completely on a wire rack before serving.

Notes

For an extra kick, sprinkle a bit of flaky sea salt or extra cayenne on top before baking. These crackers store well in an airtight container for up to one week.
