  • 4 bone-in, skin-on chicken thighs
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes
  • ½ cup chicken broth
  • ½ cup dry white wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper and brown on both sides, about 3-4 minutes per side. Transfer to slow cooker.
  2. Add sliced onions, bell peppers, and garlic to the skillet and sauté for 3-4 minutes until slightly softened. Transfer to slow cooker.
  3. Pour crushed tomatoes, chicken broth, and white wine into the slow cooker. Stir in oregano, basil, thyme, red pepper flakes, and adjust salt and pepper.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and fully cooked.
  5. Before serving, garnish with chopped fresh parsley. Serve hot over cooked pasta, rice, or polenta.

Notes

For a richer flavor, use bone-in chicken thighs and sear them well before slow cooking. Serve with crusty bread to soak up the delicious sauce.
