Slow Cooker Beef Brisket

  • 3 to 4 lb beef brisket
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Pat the brisket dry with paper towels and season all sides with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear the brisket for 4-5 minutes on each side until browned.
  3. Place sliced onions and minced garlic in the bottom of the slow cooker.
  4. Put the seared brisket on top of the onions and garlic in the slow cooker.
  5. In a bowl, mix beef broth, ketchup, Worcestershire sauce, and brown sugar. Pour this mixture over the brisket.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and easily shredded.
  7. Remove the brisket from the slow cooker and let it rest for 10 minutes before slicing.
  8. Serve with cooking juices spooned over the top, alongside your favorite sides.

Notes

For extra flavor, marinate the brisket overnight in the sauce mixture before cooking. Leftovers make great sandwiches the next day.
