Rustic Skillet Apple Cider Chicken

This Skillet Apple Cider Chicken is a delicious and easy one-pan meal perfect for a cozy autumn dinner. Tender chicken thighs are simmered in a sweet and savory apple cider sauce with apples and herbs for a flavorful dish the whole family will love.

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups apple cider
  • 1 medium apple, cored and sliced
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-7 minutes per side, or until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic, thyme, and sage and cook for 1 minute more, until fragrant.
  4. Pour in apple cider and bring to a simmer, scraping up any browned bits from the bottom of the pan. Add apple slices and butter.
  5. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until chicken is heated through and apples are tender.
  6. Garnish with fresh parsley and serve immediately.

Notes

Serve with roasted vegetables or mashed potatoes for a complete meal. For extra flavor, add a splash of apple cider vinegar to the sauce before serving.
