This Shrimp with Garlic and Coconut Milk is a quick and flavorful dish perfect for a weeknight dinner. The creamy coconut milk sauce infused with garlic creates a delicious complement to the succulent shrimp.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and cook for about 1 minute, until fragrant.
  2. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  3. Pour in coconut milk and bring to a simmer. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  4. Stir in cilantro and lime juice. Season with salt and pepper to taste.
  5. Serve immediately over cooked rice.

Notes

For an extra layer of flavor, try adding a pinch of curry powder or ginger to the sauce. Serve with a side of steamed vegetables for a complete meal.
