This hearty sausage, sweet potato, and kale soup is a comforting and nutritious meal perfect for a chilly evening. Packed with flavor and wholesome ingredients, it’s a one-pot wonder that’s both easy to make and incredibly satisfying.

Ingredients

Scale
  • 1 pound Italian sausage, removed from casings
  • 1 large sweet potato, peeled and diced
  • 1 bunch kale, stemmed and chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the pot and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more, until fragrant.
  3. Add the diced sweet potato, chicken broth, diced tomatoes, oregano, and red pepper flakes (if using) to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potato is tender.
  4. Stir in the cooked sausage and chopped kale. Cook until the kale is wilted, about 5 minutes.
  5. Season with salt and pepper to taste. Serve hot.

Notes

Serve with a dollop of plain Greek yogurt or a sprinkle of Parmesan cheese for added flavor and creaminess.
