Hearty Sausage and Tortellini Soup

This Sausage and Tortellini Soup is a hearty and comforting meal, perfect for a chilly evening. Packed with savory sausage, cheesy tortellini, and flavorful broth, it’s a quick and easy dinner that the whole family will love.

  • 1 pound Italian sausage, removed from casing
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 9 ounces cheese tortellini
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, chopped onion, and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes. Stir in the dried basil, oregano, salt, and pepper. Bring to a simmer.
  4. Add the cheese tortellini to the soup. Cook according to package directions, usually about 3-5 minutes, or until the tortellini is tender.
  5. Stir in the heavy cream and heat through. Do not boil.
  6. Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese. Serve immediately.

Notes

For a spicier soup, use hot Italian sausage. You can also add spinach or other leafy greens for added nutrients.
