Sausage and Courgette Pasta

A hearty and flavorful pasta dish combining savory sausage and fresh courgettes for a quick and satisfying meal perfect for weeknights.

Ingredients

  • 250g pasta (penne or rigatoni)
  • 2 tablespoons olive oil
  • 300g sausage, sliced or crumbled
  • 2 medium courgettes, sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon chili flakes (optional)
  • 200ml cherry tomatoes, halved
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes.
  3. Add the chopped onion and garlic to the skillet and sauté until softened and fragrant, about 2-3 minutes.
  4. Stir in the sliced courgettes and cook for another 5 minutes until tender.
  5. Add the cherry tomatoes and chili flakes (if using), cooking until tomatoes soften, about 3 minutes.
  6. Season the mixture with salt and black pepper to taste.
  7. Toss the cooked pasta into the skillet with the sausage and vegetables, mixing well to combine and heat through.
  8. Serve garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.

Notes

For extra flavor, try adding a splash of white wine or a squeeze of lemon juice before serving.
