This roasted honeynut squash recipe brings out the natural sweetness of this delightful winter squash. Simple to prepare and incredibly flavorful, it’s a perfect side dish for any fall or winter meal.

  • 2 honeynut squash, halved and seeded
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, toss the halved honeynut squash with olive oil, salt, and pepper.
  4. Place the squash cut-side up on the prepared baking sheet.
  5. Roast for 30-40 minutes, or until the squash is tender and slightly caramelized.
  6. If desired, drizzle with maple syrup and sprinkle with fresh thyme leaves during the last 5 minutes of roasting.
  7. Let cool slightly before serving.

Notes

For a richer flavor, try adding a pat of butter to each squash half before roasting. Serve warm as a side dish or use in salads and grain bowls.
