These roasted carrots are elevated with creamy whipped ricotta and a drizzle of spicy-sweet hot honey. It’s a simple yet sophisticated side dish that’s sure to impress.

  • 1 pound carrots, peeled and chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chopped fresh thyme (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss carrots with olive oil, salt, and pepper.
  3. Spread carrots in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly caramelized.
  5. While the carrots are roasting, prepare the whipped ricotta: In a bowl, combine ricotta cheese and heavy cream. Beat with an electric mixer until light and fluffy.
  6. In a small bowl, combine honey and red pepper flakes to make the hot honey.
  7. To serve, spread whipped ricotta on a plate. Top with roasted carrots and drizzle with hot honey. Garnish with fresh thyme, if desired.

Notes

For extra flavor, add a squeeze of lemon juice to the whipped ricotta. You can also substitute maple syrup for honey in the hot honey.
