This Ricotta Spinach Quiche is a creamy, comforting dish perfect for brunch, lunch, or a light dinner. Packed with fresh spinach and rich ricotta cheese, it’s a delicious and satisfying way to enjoy a healthy meal.

  • 1 pre-made pie crust
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 10 ounces fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 4 large eggs
  • 1/2 cup milk or cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the pie crust in a pie dish. You can blind bake it for 10 minutes if desired to prevent a soggy bottom.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  4. Add chopped spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly.
  5. In a large bowl, combine ricotta cheese, eggs, milk or cream, Parmesan cheese, salt, pepper, and nutmeg. Mix well.
  6. Add the spinach and onion mixture to the ricotta mixture and stir to combine.
  7. Pour the filling into the prepared pie crust.
  8. Bake for 35-40 minutes, or until the quiche is set and the top is golden brown.
  9. Let cool for a few minutes before slicing and serving.

Notes

Serve warm or at room temperature. Garnish with a sprinkle of Parmesan cheese and a fresh herb like parsley or thyme.
