  • 2 cups cooked rice, day-old and chilled
  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon sesame oil, divided
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the cubed chicken with 1 tablespoon of soy sauce and 1/2 tablespoon of sesame oil. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the diced onion and minced garlic to the skillet and cook until softened, about 2-3 minutes.
  4. Pour the beaten eggs into the skillet and cook, stirring constantly, until scrambled.
  5. Add the cooked rice, mixed vegetables, and cooked chicken to the skillet.
  6. Pour in the remaining 1 tablespoon of soy sauce and 1/2 tablespoon of sesame oil. Season with salt and pepper to taste.
  7. Stir-fry everything together until heated through and well combined, about 3-5 minutes.
  8. Garnish with sliced green onions before serving.

Notes

For extra flavor, add a dash of oyster sauce or fish sauce to the fried rice. Serve immediately.
