Warm and Comforting Ravioli Soup

This quick and easy ravioli soup is a comforting and flavorful meal ready in minutes! Packed with tender ravioli, savory broth, and vibrant vegetables, it’s a perfect weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 (20 ounce) package frozen cheese ravioli
  • Fresh spinach, chopped (about 5 ounces)
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  2. Pour in chicken broth and diced tomatoes. Stir in cannellini beans and Italian seasoning. Season with salt and pepper to taste. Bring to a boil.
  3. Reduce heat to a simmer and add frozen ravioli. Cook according to package directions, usually about 5-7 minutes, or until ravioli are tender and cooked through.
  4. Stir in fresh spinach until wilted, about 1-2 minutes.
  5. Serve immediately, garnished with grated Parmesan cheese.

Notes

For a richer flavor, use beef broth instead of chicken broth. You can also add other vegetables like carrots, celery, or zucchini.
