This Quinoa Salad with Avocado and Tomatoes is a healthy and refreshing dish perfect for a light lunch or side. It’s packed with nutrients and bursting with fresh flavors.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 avocado, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the water is absorbed and the quinoa is cooked.
  2. Remove from heat and let cool slightly.
  3. In a large bowl, combine the cooked quinoa, avocado, cherry tomatoes, red onion, and cilantro.
  4. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  5. Pour the dressing over the quinoa salad and toss gently to combine.
  6. Serve immediately or chill for later.

Notes

For an extra kick, add a pinch of red pepper flakes to the dressing. This salad is also great with grilled chicken or shrimp.
