  • 1 ½ cups pumpkin puree
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • ¾ cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons melted butter
  • Powdered sugar, for serving (optional)
  • Maple syrup, for serving

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Place cubed bread evenly in the prepared baking dish.
  3. In a large bowl, whisk together pumpkin puree, eggs, milk, heavy cream, brown sugar, pumpkin pie spice, vanilla extract, cinnamon, salt, and melted butter until smooth.
  4. Pour the pumpkin mixture evenly over the bread cubes, pressing lightly to soak.
  5. Cover the dish with foil and refrigerate for at least 2 hours or overnight for best results.
  6. Remove the casserole from the refrigerator 15 minutes before baking.
  7. Bake, covered, for 30 minutes. Remove foil and bake an additional 15-20 minutes until golden brown and set.
  8. Let cool slightly before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

For a crunchy topping, sprinkle chopped pecans and a mixture of brown sugar and cinnamon over the casserole before baking.
