These Pumpkin S’mores Cookies combine the warm flavors of pumpkin spice with the gooey goodness of marshmallows and chocolate. They’re the perfect fall treat to cozy up with!

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract, then stir in the pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Drop by rounded tablespoons onto the prepared baking sheets.
  8. Sprinkle the graham cracker crumbs evenly over the cookie dough.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For an extra gooey treat, broil the cookies for 30 seconds after baking, watching closely to prevent burning.
