These Pumpkin Pie Crumble Bars combine the comforting flavors of pumpkin pie with a buttery, oat-filled crumble topping. They’re easy to make and perfect for a fall dessert!

  • For the Crust:
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cut into cubes
  • For the Filling:
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Make the Crust/Crumble: In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press Crust: Press half of the crumble mixture into the prepared baking pan to form a crust.
  4. Prepare Filling: In a separate bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Assemble and Bake: Pour the pumpkin filling over the crust. Sprinkle the remaining crumble mixture evenly over the filling. Bake for 30-35 minutes, or until the filling is set and the crumble topping is golden brown.
  6. Cool and Cut: Let the bars cool completely in the pan before cutting into squares.

Notes

Serve these bars chilled or at room temperature. A dollop of whipped cream or a scoop of vanilla ice cream would be delicious on top!
