Delicious Pumpkin Lasagna

This Pumpkin Lasagna is a comforting and flavorful fall dish, featuring layers of creamy pumpkin sauce, ricotta cheese, and pasta. It’s a delightful twist on classic lasagna that’s sure to be a crowd-pleaser.

  • 1 pound lasagna noodles
  • 1 (15 ounce) can pumpkin puree
  • 1 (15 ounce) container ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup chopped fresh sage
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. In a large bowl, combine pumpkin puree, ricotta cheese, Parmesan cheese, sage, nutmeg, salt, and pepper.
  4. Spread a thin layer of marinara sauce in the bottom of a 9×13 inch baking dish.
  5. Layer lasagna noodles, pumpkin mixture, marinara sauce, and mozzarella cheese. Repeat layers until all ingredients are used, ending with mozzarella cheese on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes, or until cheese is melted and bubbly.
  7. Let stand for 10 minutes before serving.

Notes

For an extra layer of flavor, try adding some browned Italian sausage to the lasagna.
